I finally had a chance to make my favorite peach dessert...I just ate the last piece...
My friend Dani made up this recipe and she said I could share it. She is an amazing baker and is such a good friend to always share samples with me. Could be my begging. Anyway...
I am no fancy blogger...no amazing pictures of me cutting in the butter, or slicing the beautiful peaches, or licking the beaters after mixing the cream cheese and sugar. You'll get the picture on your own...
I did get two final pictures, showing the top and sides. Of course, we had already eaten half of it by the time I took these!
Just trust me when I tell you to make it and eat it and love it.
DANI'S PEACH DELIGHT
THE TOPPING
(start here because it needs to cool.)
3 oz peach jello
1 cup sugar
2 Tablespoons cornstarch
dash salt
Stir these together, then add 2 cups water.
Bring to a boil, then boil two minutes.
Let cool and it will thicken slightly.
Stir in 8-10 thinly sliced peaches just before you pour it over the top after EVERYTHING else is put together.
THE CRUST
1 1/2 cups flour
1 stick butter
sprinkle of cinnamon
Cut butter in flour and cinnamon until crumbly. Press into a 9x13 pan and cook 15-20 minutes on 350 until just golden. I burned my first crust because I didn't watch it. WATCH IT!
THE FILLING
1 8oz cream cheese, softened
1/4 cup sugar
2 Tablespoons milk
Beat together until it isn't lumpy anymore. Stir in 2 cups Cool Whip.
Pour over slightly cooled crust and stick it in the refrigerator for 10 minutes.
Pour over the peaches/jello mixture and let set up in refrigerator at least 4 hours.
ENJOY
Serve it like it is or top with a dollop of cool whip or do like we do and top with reddi whip.

I'm jealous, I love this dessert. I'm the only one in my whole family that does. When I make it, I have to eat it all by myself. Which I can do, but shouldn't. So I don't make it anymore.
