Spectacular!

That is how the cookbook described this fruit pizza and you know what? They were right! So, if you're feeling a little sad that summer's on it's way out, savor it one last time!

(Taken from The Essential Mormon Cookbook by Julie Badger Jensen)

Fruit Pizza
4 ounces cream cheese, softened
1/2 cup butter or margarine
1 1/4 cups flour
1/4 teaspoon salt
1 recipe Cream Cheese Topping (see below)
2 cups sliced fresh strawberries
2 kiwi fruit, peeled, sliced
3 fresh peaches, sliced, or 1 (11 oz) can mandarin oranges, drained

*In a large bowl combine cream cheese and butter. Mix until well blended. Add flour and salt. Mix well. Form into a ball, wrap with plastic wrap, and chill for at least 1 hour. On a lightly floured surface, roll out dough to form a 12-inch circle. Place in a 12-inch greased tart or pizza pan. Prick bottom and sides with fork. Bake at 425 for 12-15 minutes or until golden brown. Remove from oven and cool.

Cream Cheese Topping
12 ounces cream cheese
1/3 cup sugar
1 tablespoon lemon juice
1 cup cool whip
*Combine cream cheese, sugar, and lemon juice. Mix until well blended. Fold in whipped topping.

*When pizza crust is cool, spoon and spread over crust. Arrange fruit on top and enjoy! Makes 10 - 12 servings, or just 1 big one if you're lucky.

(I added that last part. But it was super good. Of course, my crust did not chill well (it get's that from me) so I just pressed it into the pan and baked it. I had to be careful spreading it but once it was all put together, no one knew the crust had been a near disaster (except I told everyone). So, I had extra topping and fruit so after school the kids made their own with graham crackers and loved that. Then, I still had a little more topping, but no fruit, so I put the extra filling inside egg roll wrappers and fried those babies up. YUM!!! Perhaps wonton wrappers would be better next time, but I didn't have any of those. You can get the egg roll recipe I like here. So, enjoy!)

We LOVE fruit pizza. You need to add a little banana on that pizza, yummy! I'm good for lunch any day. When's good for you?

Sounds yummy! Most recipes I've seen use the refrigerated sugar cookie dough (which I think is gross). I'll have to try this one!

I was trying to think of a dessert to take to a scrapbooking thing tomorrow and I now know what I'll be making!

One addition I like to add to fruit pizza. After the crust comes hot out of the oven, sprinkle white chocolate chips over the crust. When they melt spread a thin coating of chocolate and let cool before topping with other topping. This keeps the crust from getting soggy and gives it even an extra layer of flavor.

I had to peel my tongue off of the computer screen to tell you how good it looks! Yumm-o...and any calories it may contain are off-set by all of the delicious, nutritious fruit it has on it right...(just indulge my fantasies okay?)
