What's for Dinner?

The most oft asked question by not only myself but my children and husband.  I keep my sanity by taking a few minutes once a month and creating a monthly menu.  I often get asked what happens when I don't feel like having what's on the menu and to be honest, that rarely happens because I'd rather eat anything than have to make the decision all over again!  Sometimes things get switched around but for the most part, the question of What's for Dinner is answered, at least Sunday through Friday!  (weekends are for leftovers and going out!)

So, if you are reading this and wondering what's for dinner, here are a few ideas!  Last week we had Marvelous Meatloaf mini style.  Instead of shaping it in a loaf pan, I shaped the meat mixture in muffin tins and we each had our own.  Bonus: covered in sauce and crusty all over.  Hope that's a bonus for you as well!

If you have some time to crockpot try this Beef recipe.  We love it in tacos (fry your own shells!) and enchiladas with green sauce.  Try it!

1 Large roast...any type as it will be heavily seasoned and cooked forever!
Mix together the following and rub all over the roast:
3 cloves garlic
1 T paprika
1 T celery
1 T garlic powder
1 T dried parsley
1/2 T pepper
1/2 T chili powder

Place in crockpot.  Mix together the following and pour over roast:
2 T worcestershire
4 t hotsauce (I use Tapitillo)
1 cup beef stock

I also throw in any of the following that I have on hand:
1 large onion, sliced
1 green pepper
2 jalapenos, you choose with or without seeds

Cook on high until it shredds.  Just toss it in your mixer (I use my Bosch with the cookie paddles) and turn it on just until it's shredded.  Much easier than forks and worth washing a bowl for!)

If you are still in the mood for Mexican food but want some chicken try Tortilla Bake...lots of people use flour tortillas for this type of recipe but we are huge corn tortilla fans.  And remember the cilantro and Black Bean Salsa (found at the bottom of the Tortilla Bake post).
